Strawberry Nut Smoothie

Who would have thought? It is middle of December and the temperature is well above freezing and I’m slurping on a strawberry nut smoothie and not something peppermint or gingerbread flavoured. I honestly can’t remember making it this far into December without a snowfall or negative temperature. I’m not really complaining but have to admit that I’m not feeling quite as christmassy (is that a word???) as I would have thought. I’ve always wondered what it would be like to celebrate Christmas in the southern hemisphere wearing shorts and maybe I’ll get the opportunity this year without even having to leave home.

So, no holiday post today. Just a really tasty and easy to make smoothie that is a great snack to share with a loved one – in my case with K, my 7 year old daughter. We both love strawberries and peanuts and enjoy a good riff on a PB&J sandwich. 

Strawberries, peanuts, oats and coconut/almond milk come together as a light, refreshing smoothie that is surprisingly filling. This strawberry nut smoothie has been stamped “kid approved” by one very picky eater.  It didn’t hurt that we topped it off with a little bit of shaved cocoa – No kid of any age can resist.

To get the right consistency try blending the oats and peanuts together before adding the milk and strawberries.  After just a couple of pulses I had nearly reached the desired starting consistency.

A few more pulses and I added the berries and milk and ran the “smoothie” preset on my Vitamix Pro 750 blender to get this strawberry nut smoothie just right.  Delicious – drink it without a straw and I guarantee you’ll find yourself with a light pink milk mustache. Share if you dare – makes a large meal replacement smoothie or an amount just perfect as a snack for two.

Strawberry Nut Smoothie

Strawberries, peanuts, oats and coconut/almond milk come together as a light, refreshing smoothie that is surprisingly filling.

Ingredients

  • 1/2 cup oats
  • 1/4 cup peanuts
  • 1 cup strawberry
  • 1 and 1/2 cup coconut/almond milk

Instructions

  1. Add oats and peanuts to blender and pulse 3-4 times to get a flour like consistency.
  2. Add strawberries and milk to the blender and run the "smoothie" preset or use variable speed 8 for 30-45 seconds.
